Can a book be published multiple times?

Once the book has passed over into the public domain, then any publisher can choose to publish the book and make it available to readers. This is by far the most common means by which multiple publishers end up publishing the same book.

Can I use books in my thesis?

It’s either a different version of the story so it’s a different length or it’s typset differently, so it’s a different number of pages (probably the latter, but you weren’t clear on how it’s “different”).
